Grilled Eggplant, Tomato, and Goat Cheese
1 medium eggplant, sliced into 1/4 inch rounds
2 large tomatoes, sliced
1 (11 ounce) log goat cheese
4 tbsp olive oil
2 tbsp balsamic vinegar
Salt and pepper to taste	
Preheat grill for medium heat.
In a large bowl, coat eggplant with olive oil and balsamic vinegar. Season with salt and pepper.
Arrange half of the eggplant slices on a tray. Place a slice of tomato and a slice of goat cheese on each slice of eggplant. Sprinkle a little salt and pepper on the tomatoes and cheese. Top with remaining slices of eggplant, and secure each bundle with a toothpick.
Lightly oil the grill grate. Remove toothpicks, and arrange bundles on grate. Cook about 7 to 8 minutes, then carefully flip. Continue cooking for 6 to 7 minutes.

I am a tropical fruit and am available all year. I am known as the “King of Fruit”. My name comes from the Tamil word “Mangkay” or “Mangay”. My leaves are used in weddings to send the couple wishes of fertility; to bear many children.

Fruit of the Week: The Eggplant is botanically a fruit but treated as a vegetable. It is related to the tomato because of its tiny edible seeds, soft texture, and edible skin. The eggplant is part of the “night shade” family like tomatoes, potatoes, and peppers. The eggplant is made of 95% water. Women in the Orient used to peel the skin off and use it as dye to stain their teeth gray because it was the rage. It is called "eggplant" in the United States, Canada, and Australia because the first eggplants in those countries were purely ornamental and featured egg-shaped white and yellow fruit. Today this variety of eggplant is called "White Egg."

2. Eating cocoa releases endorphins to the brains which acts like pain relievers.

3. Kiwi’s first name was “Chinese Gooseberry”.

Restaurant of the Week: Rosa Mexicano

Rosa Mexicano is, once again, a favorite of the week. I had the pleasure of going on a weekend. Immediately walking through the door, the swank atmosphere is refreshing and the staff adds to the cool vibe. The service was inviting and fast. The Tablones were delicious and the Chamorro was tasty. The guacamole was outstanding and went so great with the tomatillo sauce; which had the right amount of spice. The margaritas were just perfect. It burned in all the right places. For a nice night out, try Rosa Mexicano. It doesn’t get more authentic than this!
